I used my lovely new griddle last night and christened it with hamburgers, med veggies and baby broc.
So today I have some burgers left over. Probably have with some salad and med veggies cooked on the griddle or with some taco beans.
Beans are very good for you.

Having some comfort food today. Began with some Butternut Squash and lentil dhansak soup with two small slices of thin black rye.
Next is some salmon and a few king prawns on a bed of pak choi with sesame seeds, sweet peppers, red onions and tomatoes.

Roasted root veggies with Jasmine rice (would have preferred brown rice, but Mr. Wonderful is partial to Jasmine). Also bought a pre-roasted chicken and that'll be optional. The cats will enjoy a few bites of it nonetheless.

It will be loin chops today, with an asparagus salad, although I might make kebabs on my new griddle.
Also planning to make some Carrot and Coriander soup. A nice starter and great for the eyes.
I've shed another 2lbs in the last two weeks, so pleased with that improvement, another 6lbs to shed.

I'm in the process of making a recipe from the 60s. My ex MIL (who was not a great cook by any stretch of the imagination) made it once and I was surprised how good it was. Serving a tin of 'slightly smoked salmon' from Trader Joe's on the side.
Broccoli Casserole
1 pkg (large) chopped frozen broccoli
2 eggs, beaten
1 can cream celery soup (undiluted)
1 onion, chopped and sautéed in butter
1 cup sharp cheddar cheese
1 cup mayo (I'm going to use less for obvious reasons, same with the condensed soup)
12 'buttery' crackers, crushed for topping
1/2 tsp granulated garlic powder
1/4 tsp salt & black pepper
1 1/2 tsp lemon juice
Bake at 350 for 45 minutes.
If anyone shops at Trader Joe's and loves salmon, I highly recommend this product.

Celery, sweet potato and griddled red pepper, soup with some grated cheddar cheese.
Next is a treat for Mothering Sunday weekend in the UK.
Lemon Meringue Pie with Ice Cream.
Later on I might have a fish salad or sardines on toast if I still have an appetite.

Yesterday I really fancied a cheese omelette. You always enjoy it when you really fancy it and haven't eaten for a long time.
Today I really fancied a sweet chicken pizza from Iceland.
I've cooked a carrot cake for tomorrow, (I put a teaspoon of paprika in thinking it was the cinnamon jar)  never mind I put two more cinnamon teaspoons in afterwards and I have tasted the cake and you can't taste the paprika.
I've also made some cajun pork with red onion, apple and red pepper to take to my sons for lunch tomorrow.

Once when I went to pour a 2nd shot of whiskey, I grabbed the olive oil instead. LUCKILY I realized the mistake before I took a swig.
Tonight will be left overs of last night, BLTs on whole grain bread with the addition of alfalfa sprouts (love those things, but man have they gotten expensive!), with homemade potato salad on the side.
Tomorrow will be making stuffed manicotti (ricotta, shredded Italian 5 cheese blend, sautéed onion and wilted spinach) and a cream sauce on top, then shove in the oven. Haven't made this in eons, probably easily a decade.
Next time I make stuffed mushrooms, I'm adding some of the Trader Joe's salmon I shared up thread. Can't wait for that either!
