What’s for dinner? 2.0
Hush Puppies....
1/2 cup of flour
1/4 cup of Corn starch
1 cup of Corn meal
1 tennis ball sized onion diced
2 Jalapeno peppers diced
Salt and Pepper
2 cups of Buttermilk

Mix flour, corn starch and corn meal
with Buttermilk and onions and jalapenos and let sit 30 minutes in the fridge (or cooler)
On a hot stove (or fire) get a 12" cast iron skillet
ripping hot, add 3/4 cup veggie oil - when it shimmers,
spoon in large chunks of batter. Do not overcrowd
Cook until golden on all sides.
